The Cornalin ranks among the most ancient rape variety planted in the canton. It is a demanding variety and needs the best places in the sun because of its late and capricious ripening. Difficult to mature both in the vineyard as at the cave, it requires a meticulous know-how and only the best winemakers manage to produce an excellent wine.
Tasting notes
Red colour with purple hues. The nose is an explosion of notes of black cherry, wild cherry, blackberry and blueberry. Strong and concentrated wine with elegant and rounded tannins and a nice acidity that gives it all its freshness. All these characteristics turn this Cornalin into a velvety and rich wine perfect for connoisseurs.
Food-wine pairing
Ideal with strongly flavoured meats, grilled beef or lamb, venison (game birds, venison medallions) as well as country pâtés or marinated meats. Also perfect with a cheese platter of semi-hard cheeses.
