The name NEZ NOIR (black nose) is inspired by our local race of sheep of the same name. Between mid-March and mid-April we let them graze in our vineyards. Like this, the soil is nurtured in perfect harmony with nature. Once the vines begin to sprout, our sheep rest on a pasture near Sierre, waiting to return to their original habitat in the Haut-Valais region at an altitude of 2,700 metres. There, facing the Matterhorn, they will then be shorn providing some kilos of high-quality wool.
Tasting notes
The nose of blackcurrants and well-ripened strawberries is heightened by a scent of fine, smoky spices. On the palate, it is a rich and concentrated wine that keeps the fineness of its aromas. The finish is long and smooth. A cru gourmand that leaves behind a sensation of pure bliss!
Goes along nicely with
Veal roll with spices, breast of duck with spices, pork tenderloin pie, coq au vin, summer barbecues, roast beef, beef Carpaccio. Platter of high-pasture alpine cheeses.
