Consisting to 100% of Pinot Noir grapes, this wine is developed after light maceration and gentle pressing. These processes give the wine its typical colour which resembles that of a partridge eye. Œil-de-Perdrix has the characteristics of a light bodied red wine. It is fresh and fruity but without the typical acidic notes of white varieties.
Tasting notes
Pale pink colour. Wild strawberry and cherry fragrance with a subtle hint of rose. On the palate, it is supple and fresh. Roundness, finesse and liveliness characterise this special wine standing out for its unique noble taste. A wine with a beautiful persistency in the mouth.
