ESSENTIAL INFORMATION
Marsanne Prafalcon AOC Valais
Ermitage is the Valais appellation for wine made from white Marsanne grapes. It owes this appellation to the most famous hillside reserved for it: that of Tain-l'Ermitage in the Côtes-du-Rhône, its region of origin. A late-ripening grape variety, Ermitage thrives in warm, stony, well-drained soils like those of Domaine Prafalcon (1.5 ha), in the municipality of Sierre.
Tasting
Yellow robe; complex aromas evoking the forest floor, mushrooms, asparagus, wild strawberries, white truffles, and fresh almonds. These aromas are also found on the palate and possess a beautiful persistence. This is a full-bodied wine with a high concentration, supported by a delicate final bitterness. It produces a rich, full-bodied, powerful wine, strongly characterized, which ages wonderfully, developing aromas of almonds and smoke.
Food pairings
It ideally accompanies foie gras, cold or hot, poached or braised fish; it also pairs just as well with desserts rich in cream with the strong flavors of berries.
