Between mid-March and mid-April, we let them graze in our vineyards. The soil is thus maintained in perfect harmony with nature. When the vines begin to grow, our sheep rest on a meadow near Sierre while waiting to return to their original land in the Upper Valais at an altitude of 2,700 m. It is facing the Matterhorn that they will be shorn, yielding a few kilos of high-quality wool.\u003c\/p\u003e\n\n\u003cp\u003e The Nez Noir rosé is produced by bleeding the must used for its red counterpart. This operation consists of racking off a portion of the must to concentrate the red wine.
